Production of white wine
White wine is made from white cider varieties. After harvesting, the grapes are pressed and then pumped into temperature-controlled stainless steel tanks. For some aromatic white wines, several hours of maceration is used. Some winemakers use battonage technology, where the wine is mixed with healthy lees or they leave the wine longer with the yeast. White wines can be aged in oak barrels. Read more about winemaking.
Light white wines
Fresh white wines from French Chablis to Italian Pinot Grigio to South African Chenin Blanc. These white wines are refreshing, ranging in color from soft lemon to light yellow with a subtle greenish hue. Citrus, garden fruit, herbal and mineral tones dominate the aroma. They are dry and have higher acidity. The style of these white wines is rather neutral and they go well with sea and freshwater fish, seafood, and delicately prepared poultry.
White aromatic wines
White aromatic varieties have their own distinctive character, such as Sauvignon Blanc, Grüner Veltliner, Rhenish and Wallachian Riesling, Pinot Blanc and Pinot Gris, but also Vermentino or Furmint. The variety, cultivation method, soil and climatic conditions are factors that determine the style of the wine. Some varieties are naturally aromatic, such as Furmint, and some are the result of vinification, such as Sauvignon Blanc. These varieties of white wines are mainly grown in a cooler climate zone and thus retain a fresh expression. Areas such as Alsace and Sancerre in France, Alto Adige in Italy or New Zealand are ideal.
Full white wines
Full and complex white wines have structure and acquire their character by aging in oak barrels. They are balanced and focused. This category includes several great Burgundian white wines such as Chassagne-Montrachet, Puligny-Montrachet, Meursault made from the Chardonnay variety. Also wines from this variety from South Africa, California or Australia. Full-bodied white wines have an oily texture as they mature. In addition to Chardonnay, this group includes Gewürztraminer, Sémillon and Viognier from the warmer regions of the south of France /Condrieu, Rhone/ and the western part of Australia and California.
