Hrozno sa zbiera výlučne ručne a pri nízkych teplotách. Pred lisovaním sa bobule jemne stláčajú. Fermentácia prebieha spontánne v nerezových tankoch a trvá približne dva mesiace. Vôňa žltého tropického ovocia trochu manga a ananásu. Šťavnaté, elegantné, jemne slané so sviežou kyselinkou.
