Whisky, often referred to as aqua vitae – the “water of life”, is among the oldest spirits in the world. The first mentions of distillation date back to ancient times, but the real development of whisky took place in the Middle Ages in Ireland and Scotland, where monks refined the art of distillation.

It was here that the legendary whisky styles we know today as Scotch and Irish whisky were born. Gradually, production spread to the USA, Canada, and later to Japan and Europe.


What whisky is made from

Whisky is a grain spirit, and its flavour is strongly influenced by the raw materials used and the region of origin:

  • barley (especially Scotland and Ireland)
  • rye (Canada, USA – rye whisky)
  • corn (American bourbon)
  • wheat (softer whisky styles)

The base is always water, grain, and yeast. The quality of these ingredients is crucial for the final character of whisky.


Whisky production – from germination to cask

The whisky production process has several stages:

First comes malting, where the grain is allowed to germinate so that starch is converted into sugar. It is then dried, ground, and mixed with hot water, creating a sweet liquid – wort.

After fermentation comes distillation, which is usually done twice in Scotland and often three times in Ireland. The result is a clean spirit with a high alcohol content.


Whisky maturation in oak casks

The most important part of whisky production is its maturation in oak barrels. This is where it gains its colour, aroma, and complex flavour.

  • minimum 3 years in Scotland
  • often 8, 12, 15, 18 or more years for premium whisky

The cask may be new or previously used (e.g. bourbon, sherry, or wine barrels). Each type of cask gives whisky a unique character – from vanilla notes to chocolate, smoke, or dried fruit aromas.

  • Single malt whisky – made from barley in a single distillery
  • Blended whisky – a blend of whiskies from multiple distilleries
  • Bourbon – American whisky with a high corn content
  • Rye whisky – rye whisky with a spicy profile
