Grappa – premium Italian grape marc brandy
Grappa is a traditional Italian spirit made from grape pomace – the leftover skins, seeds, and stems after grapes have been pressed for wine. This production method gives it a distinctive varietal character, making its flavor very close to the grape and wine it originates from.
History of Grappa
Grappa has deep roots in Italian rural tradition. Originally, it was a simple spirit created as a way to use the leftovers from winemaking. These pomace remnants were often used as a form of “natural currency” for vineyard workers, who had them distilled into homemade spirits for the winter season.
Over time, production techniques improved, and grappa moved from rural distilleries into the world of fine gastronomy. A key role in its elevation was played by the Nonino family, who began processing pomace separately by grape variety, raising grappa’s quality to a new level.
Grappa Production
Grappa production is based on the distillation of grape pomace without adding wine or other raw materials:
- collection and rapid processing of pomace after grape pressing,
- fermentation of the residual material,
- distillation (most commonly in copper stills),
- optional aging in wooden barrels or stainless-steel tanks.
The quality of grappa strongly depends on the freshness of the pomace and the grape variety used.
Types of Grappa
Grappa is mainly classified by style and aging:
- Giovane (young) – clear, unaged, bold and aromatic
- Affinata in legno – lightly wood-aged, smoother flavor
- Invecchiata / Riserva – longer aging, complex and refined
- Monovitigno – made from a single grape variety, highly expressive
Flavor and Character
Grappa offers a wide range of flavors depending on the grape variety used:
- intense grape aroma,
- notes of fruit, flowers, or spice,
- in aged grappa, hints of vanilla, wood, and dried fruit,
- a warm and long finish.
It is a spirit with a strong personality, often served as a digestif after meals.
